Dom Perignon Champagne
Probably the most famous champagne in the world. It is named after Dom Perignon, a Benedictine monk was an innovative cellar master and winemaker in the seventeenth-century, who allegedly discovered the champagne method for making sparkling wines.
Dom Perignon was the cellarmaster at the Abbey of Hautvillers from 1670 to 1715. It is known that Dom Perignon was a great technician who experimented with
cork closures and was one of the first to
practice the art of blending cuvees of different types of grapes from
different vineyard origins.
For many years Dom Perignon grapes were sourced exclusively from the
historic vineyards at Hautvillers where the legendary monk lived and
sourced his grapes. The grapes used for Dom Perignon are made from the best Pinot Noir and Chardonnay grapes with the most sunlight possible.
Dom Perignon makes one vintage brut Champagne blend each year, except in those years they opt not to release a wine at all. The wine is aged on its yeasts in the bottle for at least seven years before release.
